Steps
• Preheat oven to 175°C (350°F).
• Grease two 9-inch round cake pans and line the bottoms with parchment paper.
• In a large bowl, sift together all-purpose flour, cocoa powder, baking soda, and baking powder.
• In a separate bowl, whisk together 3 large eggs, 1 cups buttermilk, 0.5 cups vegetable oil, and few drops of vanilla essence
• Pour the wet ingredients into the dry and stir until just combined.
• Gradually mix in 1 cups hot strong coffee — the batter will be thin.
• Divide evenly between the two prepared pans.
• Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
• Let cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
• Once fully cooled, use a serrated knife to split each sponge horizontally, giving you 4 layers total.
• Brush each cut surface generously with 0.3 cups kirsch (cherry brandy).
• Beat 3 cups heavy whipping cream with 0.3 cups powdered sugar in a chilled bowl until stiff peaks form.
Assemble the cake:
• Place the first sponge layer on a serving plate.
• Spread a generous layer of whipped cream, then scatter one-third of the 2 cups pitted sour cherries (jarred or canned, drained) over the cream.
• Repeat with the remaining layers, finishing with the final sponge on top.
Frost & decorate:
• Cover the top and sides of the cake with the remaining whipped cream.
• Use a vegetable peeler to shave 100 grams dark chocolate, for shavings into curls and press them onto the sides and top of the cake.
• Optionally, pipe rosettes of cream around the top edge and place a few whole cherries on each.
Chill before serving:
• Refrigerate the assembled cake for at least 120 minutes before slicing.
